Ten years ago we opened the doors to Half Hitch. We were young, naïve, and had just signed on to open Cochrane's largest independent restaurant without fully understanding what that meant. We surrounded ourselves with good people who helped us figure it out and outside of everything we didn't know, it was built on one simple belief. That Cochrane deserved a space like this.
What happened next we couldn't have designed.
Strangers became regulars. Regulars became friends. We have hosted the birthdays, the retirements, the book launches, the baby showers, the celebrations of life. There have been seasons where we lost sight of what made it special and seasons where it came rushing back. That cycle is part of the story too.
Ten years teaches you a lot about what matters. And this year, in a random conversation, not unlike the one around a dinner table fifteen years ago that started all of this, it became clear. We had a space sitting above our restaurant that had never quite found its purpose. And we realized that the place we had been waiting for, as people who live in this town, was ours to build.
This is a family thing. It has always been a family thing. Chace, Kyle and I are building this with our hands, the construction, the creative decisions, the intention behind every detail. And we have surrounded ourselves with good people again. Gavin and Dan, our restaurant managers at Half Hitch, are shaping the menu and the drinks, bringing a level of expertise and care that we couldn't have built without them.
The Loft is a container for this community to gather. Intimate, unhurried, elevated. A small menu that changes often, made by people whose names you'll learn. Cocktails that spark curiosity. Mocktails made with the same intention. Wines and whiskeys that come with a story behind every pour. Bar bites worth lingering over.
A room where the music is subtle, the lighting is soft, and nothing is competing with the reason you came. Where you forget to check your phone. Where an idea sparks across the table that nobody saw coming. Where the night becomes whatever it was meant to be for you.
And maybe, just maybe, a place that makes you want to show up as your best self. Not because anyone asked you to. Just because the night deserves it.
The Loft is for anyone who has a moment worth savouring. A night that deserves to be unhurried. A conversation that needs somewhere to land. A gathering that deserves to feel intentional.
We can't tell you exactly what your night at the Loft will look like. But we hope that when you leave, it will have been exactly what you needed, even if you couldn't have put words to it before you walked in.
That's what we're building.
We'll create the container.
Cochrane fills it.
We can't wait to see what it becomes.
